When your account is created, one of our agents set your hours for this service to what they found on your website.
If you change your hours often, they might not always be perfectly up to date.
Currently there is no behavioral changes the visitor would experience if the hours are off a little. (or a lot)
That may change in the future, but you'd be well aware and would volunteer for the change before it would happen.
In the interim, mostly this is a guide for how many of your leads submitted their information while your store was closed.
